Confetti Energy Bites

Energy for the Whole Family

The first time I made these, I intended them for my toddler but I am pretty sure I was the one who them all! These energy bites are the perfect pick-me-up snack and help tame your sweet tooth when cravings strike. Plus, they have sprinkles and just look really fun! That is what makes them great for kids too. They are easy to make so your whole family can help you whip them up quickly. I got my son involved by giving him a separate bowl with some sprinkles, oats, and honey to mix around. He also snacked on the chocolate of course.

I altered the original recipe from babyfoode.com just slightly to make them a little safer for young toddlers. I used a ground chocolate bar instead of chocolate chips. When serving them to toddlers you may still want to break them up into smaller bites for them. Eat them for breakfast on the go, after lunch as a healthy dessert, or as a sweet bedtime snack! Energy Bite Ingredients

1/3 cup honey

energy bite mixture in a yellow bowl

1/2 cup Skippy natural peanut butter

1 1/2 cups of quick-cooking oats

1/4 tsp sea salt

1/3 cup sprinkles

2 tablespoons of flax meal

3/4 of a one large Hershey special dark chocolate bar (6.8 ounces)

Energy Bite Directions

Finely grind your chocolate bar in a food processor. Add all of the other ingredients except the sprinkles and blend. Pour into a bowl and stir in the sprinkles. For easier rolling, refrigerate the mixture for about 30 minutes. Scoop out about 1 TBSP of the mixture and roll it into a ball. Place into the fridge to set. Once they have chilled, store them in an airtight container for up to one week. You can also store them in the freezer in freezer-safe bags.
